The researchers recommended an oven temperature of between 180 and 200C, but said the secret to a perfect roast was the internal temperature of the thickest part of chicken being a minimum of 74C. It would also mean households spend an additional £45 on energy per year if they roasted one chicken per week. The research showed that on average across the four brands, if customers stuck to the recommended cooking times the chicken would reach internal temperatures of 93C, an average increase of 26 per cent higher than what is needed. Meanwhile, Sainsbury’s suggested a cook time of 85 minutes when the bird only needed 50 minutes. This meant “consumers are potentially overcooking Tesco chickens by 50 minutes, resulting in dry meat which is unpleasant to eat and potentially wasted”, the study said. Next worst was Tesco, whose roast chicken packaging suggested cooking time of 85 minutes at 180C, yet the bird reached the optimum 74C temperature in just 35 minutes. The worst offender, Lidl, recommended a cooking time nearly an hour above what was needed, researchers said, advising 95 minutes at an oven temperature of 170C, despite the food reaching ideal temperature in 39 minutes.
